Lunch: Enjoying the Fruits of My Labors


Thought I’d share this picture to show you that I really do use all the stuff I make and blog about.  See?

My delicious salad (which I’m eating this exact moment as I post this) includes my canned chicken (see post here), my canned pinto beans (see post here), and my croutons (see post here) in addition to Romaine lettuce, sweet red bell pepper, celery, and cucumbers.  I added just a touch of Thousand Island dressing.  It’s delicious!

  1. I have been thinking lately about bottling tomatoes and beans, for quick nutritious additions to meals. Your salad looks delicious!

  3. Awesome Salad Laurie! I’m getting more and more tempted to can the beans. DH isn’t fond of chicken ( he’s a heart patient so he’s eaten a LOT of it lol), but I do make a lot of Chili Beans in the winter months. I keep about 1/3 and the rest we take over to daughter and grand kids . So it’s a pretty big pot. Lol. Thanks for the post,, it’s sure made me hungry:) hugz:)

I like(d) to pressure can my own beans but recently found out I’m allergic to many beans I might still get around to pressure canning chickpeas as they have a different texture than store bought canned chickpeas and my sister loves them. I also water bath can tomatoes when I get them from the farm stands in summer time. I totally suggest anyone getting into it!!!


  5. I do can most things but have never done dried beans. I will try them some day. One of my family’s favorites is whole berry cranberry sauce.
