We’re halfway through the marathon called May, and I thought it was high time for another giveaway!  Emergency Essentials generously provided our prize.  Thank you!!!  They were also kind enough to give me a second item to test, so I can honestly tell you what I think about it.  And I like it…  A LOT!  What am I giving away?  Take a look…

Dehydrated hash browns!  A HUGE bag of them with 143 servings!  They rehydrate quickly and easily making them perfect for everyday use in my house (and yours).  Sure, I can go the traditional route and use them to make hash browns, but I decided to start with something a little different.  I made potato soup with them yesterday.  It was quite hot here (in the upper 90s), and although soup is a warm dish, it doesn’t heat up my house.  It was delicious!

 

I will be sharing a few different recipes with you throughout the length of this giveaway, so you will have some great ideas about incorporating traditional “food storage foods” into your every day diet.  Let me begin with the recipe I used last night.  (Want to skip the recipe and go right to the giveaway?  Scroll to the bottom of this post for details.)

Super Simple Potato Soup

Adapted from a recipe by Dana Bobek

Prep time about 20 minutes

 

1 stick of butter, salted or unsalted

1/2 onion, diced

1/2 fennel bulb, diced (you can omit, use celery, or add extra onion to replace this ingredient)

1/2 cup all-purpose flour

8 cups of hot water

2 “tubs” of Knorr Homestyle Chicken stock (Not sure what this is?  Amazon carries it here.  Or you may replace this and the water with 2 cans of chicken stock and 4 cans of water)

2 14-oz cans of evaporated milk (3 cups – you may use cream or half-n-half, if you prefer)

4 cups Provident Pantry Evriday Dehydrated Hash Browns

1 potato, cooked in the microwave until cooked through (3-4 minutes), chopped including skin (optional)

salt and pepper, to taste (I added about 1/2 teaspoon of each)

 

Mix together  hot water and Knorr homestyle chicken stock, using a whisk to combine.  Set aside.  Melt butter in a large pot over medium heat, then add onion and fennel.   Cook until onion and fennel are tender (about 5 minutes).  Stir in flour and cook for about 1 minute.  Gradually add evaporated milk and water/chicken stock mixture, stirring to incorporate.  Next, add the Provident Pantry Evriday Dehydrated Hash Brown Potatoes.  Turn heat to medium high and let mixture come to a low boil.  The soup will thicken as it gets closer to a boil, and the dehydrated hash browns will plump up.

 

If you are adding the optional baked potato, add it once the mixture reaches a low boil.  Then add salt and pepper, to taste (whether or not you’ve added the optional potato).  I added about 1/2 teaspoon of each.  Serve alone or with your favorite toppings (cheese, sour cream, green onion, bacon, etc.).

After cooking the onion/fennel mixture for about 5 minutes until they were tender, I added all-purpose flour (to form a roux).

Then I added a little of the evaporated milk.

Almost immediately, my roux mixture became very thick.  Don't worry when this happens to you.  Just continue to gradually add your evaporated milk, stirring the entire time.

Very soon, all the evaporated milk and broth mixture were incorporated and the soup looked like soup (not a big gloppy mess).

Next came the dehydrated hash browns.

While the soup was coming to a boil, I chopped up my fresh potato.  This was not necessary for flavor, but my family is used to having potato with skins in our soup, so I added it to keep the soup somewhat familiar.

After the soup reached a boil, I added the chopped potato and seasoned the soup with salt and pepper.  Then, it was ready to serve!

    I’d make a potato pancake but adding things like green onion, red onions (yes, I like onions), tomatoes, olives, ham and a bit of cheese. Okay, I need to win this, it sounds very yummy!! 🙂

  12. Hi Laurie, I just finished reading your post again on being prepared for a disaster even for a week. What I found on Emergency Essentials. Was a simple recipe for strawberry honey butter. How great would that taste in an emergency and it takes so little to make it. So of course I’d like to have the Freeze Dried Strawberries. Whether you’re able to make pancakes, biscuits, bread or flour tortilla’s it would sure taste good for a treat. Thanks, your posts are always soo good and appreciated. HUGZ:)

  13. Laurie, I never did comment on your potato soup and it looks so good! I think I’m going to try it using has browns and freeze dried potato chunks. We love it around hete, so it’ll be a big hit around here. HUGZ:)
